White Bean Chili

It's soup season!! After my husband eagerly ate two bowls of this white bean chili he paused, and immediately said "That needs to go on the blog... like right away!"

We like to top this chili with any nacho topping, salsa, sour cream, avocados... anything south of the border. This recipe is great with or without meat. If you choose to add a chicken breast, don’t worry about defrosting it, I threw it in frozen and it cooked up perfectly. Shred the meat with a fork before


White Bean Chili


2 cups dried White Beans

2 tomatoes (or 1 can diced tomatoes)

2 peppers, bell or poblano

5 cloves of garlic

1 shallot or small onion

1 tsp cumin

1 tsp chili powder

1 tsp salt

3 cups of water

1 chicken breast (optional)


  1. Place two cups of dried beans in an instant pot with 8 cups of water. Select 'Bean/Chili' setting for 45 minutes. While the beans cook, chop up the veggies.

  2. Drain and rinse beans.

  3. Place beans and all remaining ingredients into the instant pot and select 'Bean/Chili' setting for 30 minutes.

  4. If you chose to add chicken, shred it with a fork before serving.

  5. Top with cilantro, green onions, cheddar cheese, lime juice, salsa, or all the above! I like mine with a big pile of cilantro and fresh lime juice.
