Pho Bone Broth

Pho is one of my absolute favorite foods. I love the variety of flavors and the warming spices. It’s filling and can be very nutritious when it’s made with properly prepared bone broth.
Bone broth is healing and has a myriad of health benefits including:
Anti-inflammatory
Immunity boosting
Strengthens bones, nails & teeth
Alleviates common cold
Helps normalize stomach acid
Improves arthritis & joint pain
When I start to hear about people getting colds in our area I always make sure we start a batch of bone broth.
Bones are inexpensive and can be found at any butcher or in some grocery stores. We like to use bones that are sourced from grass fed cows. You can also use chicken bones for this recipe. It will have a lighter color and a slightly milder flavor but both options are delicious.
Pho Bone Broth
3 large star anise 10 cloves 1 stick of cinnamon 1 tsp fennel seed 1 medium ginger root 2 Shallots (or 1 medium Onion) 8 cloves of garlic 2 lbs beef bones 2 T vinegar fish sauce hoisin sauce
Roast your bones @ 400 for 30 mins, remove and add to instant pot.
Roast shallots and ginger for 5 mins, remove and add to instant pot.
Roast spices until fragrant, about 5 min, add to instant pot.
Add vinegar and raw garlic cloves.
Fill the basin with water, to the max line.
Select broth setting on instant pot and set for 4 hours.
Strain broth and season with fish sauce and hoisin. I would recommend starting with 2 T of each at first, tasting as you go to get the desired flavor.
Beef Pho
Pho Bone Broth
1 pkg thin rice noodles
10 oz thinly sliced beef
limes
bean sprouts or thinly sliced cabbage
thinly sliced white onion
basil
cilantro
Soak rice noodles in warm water until flexible, approximately 20 minutes.
Heat bone broth in a large stock pot until very hot.
Add rice noodles and stir until rice noodles are cooked through, approximately 5 minutes.
Pour into individual bowls.
Top with thin slices of beef, bean sprouts or cabbage, thinly sliced onions, basil, cilantro and a squeeze of lime.
Additional condiments may also include hoisin, sriracha, chili paste or jalapeños.
