Chocolate Ganache

The name sounds fancy but it is so simple that once you attempt this recipe you'll want to recreate it again and again. Ganache is an icing, glaze, cream or sauce used for filling pastries. Depending on the type of chocolate you use, it's easy to make a variety of flavors. Try dark or white chocolate in place of the chocolate chips, the possibilities are endless!

It is very rich, so keep in mind that a small amount will make a big flavor impact. I like to add a small amount of vanilla because I'm a big vanilla lover, but you are welcome to leave it out if you are not a fan. You can substitute this for another type of extract if you want to change the flavor profile. Think about using almond or mint extract. The flavor combinations are endless with this recipe.

I have used ganache as the filling for cakes or on top of the frosting for a beautiful drip effect. We used it on top of Chad's Chocolate Cake after frosting with Creamy Peanut Butter Frosting.

Chocolate Ganche


2 1/2 c. Chocolate Chips

1 c. Cream

1/8 tsp vanilla extract


  1. Measure out chocolate chips in a small bowl. Add vanilla extract or extract flavor of your choice.

  2. Warm cream in a small sauce pan on medium to medium high heat until steaming, you do not need to boil.

  3. Pour warm cream over the chocolate chips. DO NOT STIR!

  4. Set timer for 5 minutes.

  5. Using a small whisk, stir ganache until smooth.

To apply this to your cakes simply pour over or funnel it into a squeeze bottle to store. If the ganache hardens too quickly I will microwave it for a few seconds. Once it cools it will have a truffle like texture.
